Yeah, that’s right I had pancakes. For lunch. I didnt’ even wait for the sort of accpeted practice of making breakfast for dinner. You see, around here Kirk usually makes breakfast on the weekends. Which is fantastic. Usually, he lets Grace help him which is a testament to what a great dad he is, because she’s not much help. Unless you need a mess made. But the thing is, they always, always make eggs. ALWAYS. Kirk is a firm believer that all meals must have protein. This rules out pancakes.
Well, this morning they made eggs and I really wanted pancakes. So I was grumpy all morning. And then I decided, what the hell. I’m making myself pancakes for lunch. And you know what? They were delicious and carby and I feel a magical food coma coming on as I write this. So go ahead. Have yourself some pancakes for lunch. It’s really improved my outlook for the whole day.
Debbie’s Homemade Pancakes
- 1 Cup flour
- 2 tbsps baking powder
- 2 tbsps sugar
- 2 tbsps oil
- 1 egg
- 1 Cup milk
- Preheat griddle to 350, coat generously with cooking spray or butter
- Mix together all dry ingredients ( I like to use my pyrex 4 cup mixing bowl for easy pouring of batter). In a separate cup crack egg and beat lightly. Add milk, egg and oil to dry ingredients.
- Stir only until JUST combined. There will be lumps. DO NOT try to stir them out. Let batter sit at least one minute. You’ll know it’s ready when it puffs up and has tons of bubbles on the top.
- Pour batter onto griddle. Let cook until many bubbles begin to form and pop on the top. Flip until cooked on other side. Eat. Enjoy.
